I made some veggie kabobs for a bbq I went to a few weeks ago. (Clearly I stole the idea from the infamous fruit kaboobs floating around on pinterest:) It was a great day . . .

Happy August!
I can't believe its AUGUST already?!? I say that at the beginning of every month but this time I really mean it. This summer is going by so fast - having off more I had planned on getting a lot done around here. But ummmm- that hasn't happened - maybe this month? 
We are 6 months pregnant - and I have been enjoying eating a lot lately especially fruits, veggies & just about anything cooked on the grill. Also - I have been craving (nothing to crazy) - cheese, iced tea & V8.

we are dog-sitting for the next couple of days so I will back soon with pictures of are furry friend Ms. Roxy:) & a new belly shot.

Happy December!
I got to do a lil' extra thrifting this week & have stumbled upon some pretty amazing treasures!!! - I am going to share more about them this weekend. Also Josh had an awesome urology check up AND a orthopedic check up- I am going to blog about that soon too. But for now I am just going to share a simple recipe I found via Rachael Ray's lovely site . . .
•2 tablespoons extra virgin olive oil
•8 bone-in, skin-on chicken thighs
•Salt and ground black pepper
•1 1/2 pounds baby potatoes
•1 small onion, chopped
•2-3 cloves garlic, finely chopped or grated
•4-5 sprigs thyme, leaves picked and chopped
•2 lemons, thinly sliced
•1/4 cup honey
•1/4 cup chicken stock or water
In a skillet, heat the olive oil over medium-high heat. Season the chicken with salt and pepper and brown on both sides.Scatter the potatoes, onion, garlic, thyme and lemon slices in the bowl of a crock pot. Season with salt and pepper. Lay the browned chicken over the veggies and drizzle with honey. Add the stock or water, cover and cook, undisturbed, for 4 hours on high or 6-8 hours on low
....Oh & a puddle of ranch on his plate is a must!

I Love using my slow cooker when I have a lot going on! Its the best walking in from a busy day with Josh knowing that dinner is ready and it smells sooo good! Espically when garlic is involved . . .
Josh is a very picky eater - but I have found that if you stick a kabob through it OR fancy toothpicks . . . he will eat it!?....Oh & a puddle of ranch on his plate is a must!

Hello October . . .
I am so happy October is finally here!!!! This is the best time of the year. To celebrate we whipped up some Pumpkin Muffins yesterday. They weren't from scratch- I picked up a yummy mix from Trader Joe's- it was inexpensive & easy to make:)
Why yes that is a vintage Pyrex tray I found at my favorite thrift shop yesterday:)
They look boring- next time we are going to try a topping?
This time of the year I tend to go a lil' over board with pumpkin - it's just SOOOO good! I usually get sick of it by December . . . . so starting in August I miss that amazing pumpkin flavor & can't wait to have it again:)Happy October!

Strawberry Festival
There was a Strawberry Festival around the corner from us tonight, we took a short walk over to check it out!
Tell me- When you think of a Strawberry Festival- what do you think of?
Personally, I think. . . lots of fresh strawberries . . .maybe some kids games. . . lots of treats made from strawberries . . . maybe some entertainment???
Well this festival was in a tiny basement & I'm pretty sure we were the only people under 80. When we first walked in everyone was staring at us like we had 10 heads. I think it was more of a church function- but they extended an invite out to our community . . . & we were the only strangers to come? Just a guess? I paid $8 for us to get in & they gave me a styrofoam bowl with a square of vanilla ice cream with a scoop of frozen strawberries of top. That was it? Seriously, that was the festival!
Even though it wasn’t what I was expecting . . . I peeked around at all the other people & they looked like they were having such a fun time. . . it was sweet! While I was sitting there mad that Strawberry Shortcake wasn’t making an appearance I realized . . .maybe frozen strawberries weren’t so bad . . .AND in case you were wondering-Charlie & Mosby are back and doing AWESOME- they have cute little shaved bottoms! We spent the morning making sure they were comfortable. Then it was off to school and work. I had a busy day, I am extremely thankful for my job. I truly do have so much fun while I am working!!!! I smiled & laughed a LOT today . . . & when I saw Josh he asked me what the line on the side of my face was . . . it was my smile line! I’m not sure if that is good or bad ? Maybe its time to look into botox-kidding ;)

Yes today I was completely fooled by the weather. I heard it was suppose to rain today! I even saw it on Yahoo weather???But it never did .... it is VERY windy out now ( I am having trouble using my computer & my cell phone tonight???)
I had planned indoor activities to do with Josh today, we went to a place called "Jumpers" that he loves, then to the library. We had a fun day . . . I even got to go to a couple of yard sales on the way:)
Usually when we go to the library we just go to the children's part & Josh does his thing. I usually order my books on Amazon they come & I get excited . . . I read a chapter and then they sit on my bookshelf . Today I thought I would save money & check a few out myself . . .

I even whipped up a really easy dessert from: "The Magic Of Peanut Butter"
(I LOVE Peanut Butter:)
Summer Sundae Ice Cream Pie:
1/2 gallon on ice cream, slightly softened (Target brand is perfect for a recipe like this & its only $2.99)
9-inch chocolate crumb or graham cracker crust
1-2 to 3/4 Peanut Butter melted
2 Tbsp of chocolate sprinkles, Target was out so I substituted mini chocolate chips
1. Scoop ice cream into crust
2. Drizzle with Peanut Butter
3. Top with chocolate sprinkles or chips
4. Cover & freeze until ready to serve:)
I ate so much of the ingredients while making it that I am going to wait until tomorrow to have a slice- but it looks REALLY good:)

O is for Omelet
Sometimes on Saturdays I like to go out to breakfast . . .
& Some Saturdays I like to make it with Josh . . .
This morning we whipped up an Omelet Casserole
I found this on Allrecipes.com &I halfed it because it's just the 2 of us:
8 Eggs
1 Cup Milk
1 Cup Shredded Cheese
Salt & Pepper (I use onion salt:)
Add whatever else you like Broccoli, Tomato, Spinach, Green Pepper, Ham, Sausage, Bacon, Onions
Preheat oven to 350 degrees
Beat eggs
Add the milk, salt and pepper
Mix well
Stir in fillings
Add cheese & stir well
Pour mixture into a well greased 4 quart casserole dish and bake for 50 to 60 minutes or until top is lightly browned.
It was yummy BUT I completely forgot to grease my Pyrex- Oops!
Now we are off to get ready for a fun Saturday . . . & I just got a text about a huge yard sale that I want to check out! Have a Great Weekend!
I will be having a fabric AND Pyrex giveaway ~I will be back with the details!
